i am looking for inspiration - pasta was for lunch so no pasta. :)

  • We are either going to Olive Garden for a friends birthday or if we stay home I will probably put some tilapia in the toater oven with some white rice. Exciting right?

    oh i have to do a store run. we are out of everything unless i can make something with spices, eggs, cereal, water, lemonade and bread. LOL

  • Truluck's leftovers.  But the Nov Southern Living had several recipes from Pioneer Woman so I've had a brisket marinating since yesterday afternoon and will cook it tonight, so ask again tomorrow!
  • DH said tonight was going to be chicken enchiladas with a green sauce, two nights ago was a homemade chicken and sausage jambalaya. I like when DH cooks. We get a good variety.
    We have so much time, and so little to do! Strike that, reverse it.

  • Roasted rosemary chicken, mashed potatoes, and a salad.

  • Tonight we're trying to mae fish tacos for the first time.  We are also cooking up some ground turkey just in case we mess it up

  • If DH is home I will probably make Fly's sausage penne pasta bake.  If he has to work, I will probably make grilled cheese and soup.
  • I had chicken tacos the other night... and tomorrow I am making KA's Chicken taco recipe.  Tonight... will probably be something quick from Randalls... soup or chili.
  • BBQ Salmon!  Yum!  Take 1 pound salmon and soak in 3 tablespoons lemon juice and 2 tablespoons soy sauce in a small dish for 15-20 minutes.  Turn over often.  Place on grill or broiler.  After 10 minutes baste with bbq sauce.  Cook til done.

    I'm also making herbed red potatoes.  2 Tbsp dijon mustard, 1 tbsp olive oil, tsp rosemary, tsp parsley, tsp oregeno, pinch of salt and pepper. Mix together in bowl. 1 pound small red potatoes.  Halve the potatoes and place in ziplock bag.  Pour the mixture in with the potatoes and shake til potatoes are coated.  Place potatoes in shallow baking dish and bake at 425 for 25-30 minutes.

  • Chicken & Shrimp Casserole

    1 1/4 cups raw converted rice

    1/2 cup melted butter (I use soy butter b/c of my dairy allergy)

    3 cups chicken broth (I ended up using a whole box of broth so there would be enough liquid)

    3-4 cups cooked chicken, cut into 1 inch pieces

    8 oz. button mushrooms, sliced

    1/3 cup soy sauce

    1 lb. shelled and de-veined shrimp

    8 green onions, chopped

    2/3 cup slivered almonds

    Mix rice with melted butter in the crock pot, stir to coat rice thoroughly.  Add all the ingredients, except the slivered almonds and green onions.  Cover and cook on low for 8-10 hours or high for 4-5 hours.  Sprinkle the almonds and green onions over the top before serving.

    Oven-Roasted Sweet Potatoes and Onions

    • 4  medium peeled sweet potatoes, cut into 2-inch pieces (about 2 1/4 pounds)
    • 2  medium Oso Sweet or other sweet onions, cut into 1-inch pieces (about 1 pound)  (you don't have to use sweet onions, if you don't want to)
    • 2  tablespoons  extra-virgin olive oil
    • 3/4  teaspoon  garlic-pepper blend (such as McCormick)
    • 1/2  teaspoon  salt

    Preheat oven to 425?.

    Combine all ingredients in a 13 x 9-inch baking dish, tossing to coat.

    Bake at 425? for 35 minutes or until tender, stirring occasionally.
