Finally got around to making the gyros last night.  Thought I would give you a review.

I made this Greek marinade recipe because I had everything in the house already.  Well, almost everything.  I didn't have fresh parsley so I substituted two teaspoons of dried.  I really liked it and would make it again.  I would maybe add a little more black pepper and a pinch of salt (or onion salt).  Also, I marinated a lot longer than 2 hours.  I think I stuck it in the marinade around 10 am and we grilled around 5:30pm, so all day.  I used skirt steak because I wanted to get it out of my freezer.  It wasn't tough at all, especially since I listened to Fly and sliced against the grain.

I cut up some white onion and tomatoes, used the pre-made Tzatziki sauce  and whie pitas from HEB, and added some crumbled feta on top (we spare no calories when it comes to Greek food).  They turned out great.  Still best with lamb, but pretty darn good for what we had to work with.

    mmmm...I have all of those ingredients for the marinade, I'll def bookmark, thanks!
