So I have been really good about eating right but I have been dying for some sweets! Chocolate particularly! A girl I work with make a cake using only the cake mix and a can of diet coke. See below link for the recipe.

I've heard of cakes that require soda, but I think this is the first diet coke one I've come across. That being said, I'm addicted to diet coke, so I would be all for it.
My only concern is that some artificial sweeteners (like the aspartame in diet coke), if I'm not mistaken, become toxic when heated. I think it's a different chemical in coke than what you would put in your morning coffee. I can't say that that's not an urban myth, but I would be leary...
I have never tried that but I do love diet coke.
This past weekend I made brownies using just a devils food cake mix and a can of pumpkin. They even had a cream cheese topping using light cream cheese, splenda and french vanilla coffee mate. They are 2 points a piece if you cut them to the recommened size of 16 pieces in a 9 x 13 pan!

Swirls Gone Wild Cheesecake Brownies
1 box devils food cake
1 15oz (or about 2 cups) pure pumpkin
6oz (3/4 cup) light cream cheese
1/4 cup splenda
1 teaspoon French vanilla coffee mate
1/4 tsp vanilla
In a lrg mixing bowl combine cake mix and pumpkin and mix well to combine. Spread into a nonstick or light cooking spray coated 9x13 pan. Set aside.
In another bowl place powdered cream and mix with 2 tbsp of warm water to disolve. Add room temp cream cheese, splenda and vanilla. I used a fork and mixed vigorously until smooth. Spoon this mix over brown batter and swirl with a knife. I have to admit I got a little nervous at this point because the brownie batter was thick and it didn't look to be a swirled as it could have been but after I took them out of the oven they looked great! They are slightly more cakey then chewy though. But it hits the spot for a sweet treat!
Bake at 400 for 20 to 25 minutes.

I made it last night and my H loved it! It was really delicious and had the texture of a brownie! Only 160 calories in a square whereas a normal piece of cake has 260. Here's some pics:
