Freezer meals

Any recipes that you ladies really like? This weekend is suppose to be horrible weather (snow, sleet, freezing rain). So as long as my swelling goes down, I would like to make some meals because Dh cannot cook lol. My parents wont be coming for a week after the baby is born and my inlaws will not come until march or april so i basically need to rely on myself.

I already have Taco soup frozen (thanks Mel) and two containers of White chicken chili. My mom is planning on making us some lasagna and then freezing some for us when she leaves. I do have this website for some ideas. Any others?

  • How about enchiladas?  I dont' have a recipie for them because I but the seasoning packet at the store and follow the directions on it.  It seems like it would be easy to freeze and make again.

    There are also lots of casseroles out there, not sure what you like in terms of tastes but I think those would freeze nicely.

  • if you are looking for websites, I like allrecipes.com, you can put what ingredients you would like to have, which ones you do not want and sorty by rating too.

  • I'm making food for our friends with their newborn.  My standard is stuffed shells, but I'm also making the Buffalo Chicken Lasagna in the crockpot.  Of course, that can't be frozen.  The stuffed shells do freeze well, and you can easily make one batch into smaller containers (someone suggested loaf pans) so it can make SEVERAL meals.

    When I asked on What's Cooking, enchiladas were a big response, as well as lasagna.  Soups/chilis are common, obviously.  We are also taking our friends Carrot & Sweet Potato Soup that we froze and had thought about taking them Black Bean Soup (except that batch did not work out.  But it freezes well and is a fairly simple crockpot recipe.)

    I'll take a look and see what I can find.  I just deleted the links I'd had, though.

  • You could make meatballs and then freeze them to have with pasta or on a sandwich. Or you can put some chicken breasts along with a marinade (like a store bought) in a ziplock bag and then freeze it all together. The thaw it and cook it on the stove or in the oven (or grill if it's warmer out).

    My SIL came and made a few meals to freeze for us. One of my favorites is prosciutto wrapped chicken stuffed with garlic & herb cheese. It freezes well and doesn't take up much space and you can make as much or as little of it that you'd like.

    Here's what you need: thin sliced chicken breast, slices of prosciutto, and Boursin garlic & herb cheese (I've also used the Laughing Cow garlic & herb wedges to save calories).

    Lay a piece of prosciutto down. Then place the chicken breast spread out on top of it. On each chicken breast spread about a Tablespoon of the cheese in a thin layer. Roll up the chicken breast with the prosciutto on the outside. I then wrap each little chicken roll-up in some foil and throw them all into a zip lock bag. When you're ready to eat them desfrost them completely, remove from the foil, and then put into the oven at 350 for 30-35 mins.

    We usually eat it over egg noodles or some rice. Very tasty and very simple!

    I was thinking of the Chicken Cordon Bleu like this too - Clean Eating's is the Laughing Cow wedges and spinach.  You could make that and wrap it up too, but I'm not sure how the spinach would survive.  (I also like to run some garlic through the press and then put it on the inside with the laughing cow.)

    Yeah... I remembered you posting it, but it was also published in Clean Eating magazine with the addition of spinach (which MH actually liked that addition.)  Whenever we make it, I almost always forget to put the ham in it. LOL
