I have 2 chix breasts defrosting for dinner. Anyone have any simple, yet tasty/healthy ideas of what I can do with these? I have a decently stocked kitchen.
I'm just bored with everything I usually do.

Ok, I'm very random and sporadic when it comes to cooking. I usually don't follow recipes and just kind of go with it, so apologies for my lack of recipe below
-poke holes in thawed chicken breast with fork (so it can absorb marinade)
-make marinade to bake the chicken in: olive oil, salt, pepper, oregano, italian seasoning, red pepper flakes (if you like)
-place chicken in baking dish and pour marinade on top just enough so the entire bottom of the baking dish is covered
-bake chicken at 350 degrees in a baking dish for 45 minutes. I like to flip them about half way through
-once you flip the chicken at 25 minutes in add whichever ingredients you like to the top of the chicken and let bake for the rest of the time (20 or so minutes)...some ideas that I've done before:
*provolone cheese, mango salsa, avocado
*artichoke hearts, olives, feta cheese
*mozzarella cheese, prosciutto

This sounds silly but I swear it is SOOOOOO good. I read about it on WW Online and just tried it for the first time last week.
Chicken Breast + a can of salsa (any kind!) + crockpot = DELISH!!!
I've done this,,,poured it over rice...quite yummy!
One of my favorite things to do with chicken is stuff it. It is a bit time-consuming, so I usually make about 6 breasts at a time and then freeze 4 of them for future use.
Anyway, for the filling I usually use thawed frozen spinach, garlic, onion, sun-dried tomatoes, feta cheese, salt/pepper and some lemon zest. You could also add some chopped kalamata olives and artichokes if you really wanted. I just sautee the onions until they're soft and then add in everything else and sautee it for a minute or two more.
Pound out your chicken breasts so they are thin. Spread some filling on each one, roll it up, and tie it with kitchen string. (If you're going to freeze them, do it now). Salt and pepper each one. I sautee each one for a few minutes on each side to get a good sear on it and then pop the pan into the oven for about 30 minutes (350). It's soooo yummy, and really good for you (it's actually a WW recipe).
