Okay so Derick can't really eat much of anything. Thank goodness he hasn't gotten his appetite back or this would be even more of a problem. Basically anything he eats upsets his stomach to some degree. I'm trying to fix bland, soft foods and it's kinda hard. I'm running out of ideas past plain chicken, mashed potatos, and potato soup. Any suggestions?

I made this on a whim one time and it was pretty good. White rice with some butter and cinnamon. not 100% bland but not 100% overpowering either.
There is always the tired and true BRAT diet. Bananas, Rice, Applesauce and Toast.
What about oatmeal? You could do that similarly to the rice that Melanie suggested. If you use the old-fashioned oats, they'll be pretty soft. You can add apple butter, pumpkin, peanut butter, cocoa powder, cooked fruit (since that'd be softer).
Or you could make similar concoctions with ricotta cheese (with some cinnamon and sweetener, cocoa powder and sweetener, etc.)
Yogurt?
