My parents are coming into town on Friday and are coming over to dinner at our apartment. So, I need to make something that won't take long to prep or cook - I don't usually get home until 5:00 or so. Any suggestions?

You could always make a casserole like a lasagna the night before and refrigerate it until you get home, then just pop it in the oven for an hour.
Or.....
I like to make penne paste with various veggies (I usually use halved grape tomatoes, sliced zucchini, yellow squash, and asparagus), sliced chicken sausage (I like to us Aidell's artichoke and garlic sausage, but any kind of sausage will do, or omit to make vegetarian). I toss it all together with a little garlic, olive oil, and various Italian herbs. Serve with garlic bread, and you've got a meal! So easy, and very yummy! You can prep the veggies the night before and have the in the fridge. All you've got to do is boil the pasta, toss with all ingredients, and saute a little. Even MH likes it, and he's doesn't usually like veggies unless I hide them.
I was going to suggest something like lasagna too. That is a pretty quick & easy dish...especially if you can make it the night before!
Leah - you always have the best & easiest recipes. Not long ago you suggested a slowcooker dish with just chicken & salsa. We cook it all the time! So yummy!
Ooh, what's supperworks? Alas, no BBQ in the apartment!
I like the pasta toss ideas! I'm a lactard so no cheesey lasgane goodness for me, but those are good ideas!

I was going to suggest fish also. Broiling salmon takes no time at all. You can serve it with veggies and rice. Here is a broiled salmon recipe that is very yummy that I have made in the past (for 2 fillets):
Cut up some scallion and fresh ginger and mix that in a bowl with reduced sodium soy sauce (about 4 tablespoons) and honey (about 2 tablespoons). Pour about 3 tablespoons of the marinade over the the salmon and put in the fridge for about 15-20 minutes. Then broil the salmon for about 10 minutes in oven. In the meantime, if you want you can cook the remainder of the marinade so that it caramalizes into a glaze that you can put over the finished salmon. You can also lightly toast some sesame seeds in a dry skillet pan and sprinkle that on top of the finished salmon.
It's very easy!!!
LOL.....MH is a lactard, too, and calls it such as well. I've never heard anyone else call it that!
