Menu HEEEEEEEEEELP!

My parents are coming into town on Friday and are coming over to dinner at our apartment. So, I need to make something that won't take long to prep or cook - I don't usually get home until 5:00 or so. Any suggestions?

  • You could always make a casserole like a lasagna the night before and refrigerate it until you get home, then just pop it in the oven for an hour.

    Or.....

    I like to make penne paste with various veggies (I usually use halved grape tomatoes, sliced zucchini, yellow squash, and asparagus), sliced chicken sausage (I like to us Aidell's artichoke and garlic sausage, but any kind of sausage will do, or omit to make vegetarian).  I toss it all together with a little garlic, olive oil, and various Italian herbs.  Serve with garlic bread, and you've got a meal!  So easy, and very yummy!  You can prep the veggies the night before and have the in the fridge.  All you've got to do is boil the pasta, toss with all ingredients, and saute a little.  Even MH likes it, and he's doesn't usually like veggies unless I hide them.

  • Ooooh, I forgot the best part!  I like to add a splash or two of balsamic vinegar....gives it the BEST flavor!

  • I was going to suggest something like lasagna too. That is a pretty quick & easy dish...especially if you can make it the night before!

     Leah - you always have the best & easiest recipes.  Not long ago you suggested a slowcooker dish with just chicken & salsa.  We cook it all the time!  So yummy!

  • In the future consider Supperworks. OMG.  Lifesaver. If you wanted to make something, what about tuna casserole?  Or chicken parm with a baked potato.  If it's not a billion degrees below zero, why not BBQ a steak? Or better yet, order in!  I am lucky since I have a place about a 5 minute walk from my home called "Today's Menu" which has fresh meals prepared and frozen.  He has saved my arse a few times when company comes over.  Yeah, I'm home right now but do you think I'm cooking when Ben sleeps? LOL!

    I like the pasta toss ideas! I'm a lactard so no cheesey lasgane goodness for me, but those are good ideas!

  • Ohh, are you lactose-intolerant?? I was gonna suggest some ideas but the contain dairy so that might not work. Any kind of pasta would probably be easy or if you have any chicken, I just pan-grill it with BBQ sauce and it's a quick, easy meal. Another quick meal thing I do (if you have a deep fryer) is batter some broccoli and shrimp for tempura and serve with dipping sauce. That's all the non-dairy stuff I can think of =)

  • I'm a big fan of pasta for nights like that - even simple recipes can still be delish! I like one that we make with sliced smoked chorizo (it's hard like salami), kalamata olives, baby spinach and pieces of boccocini, all with a tomato-based stir-thru sauce and some fresh Parmesan. The whole thing takes probably 20 minutes from start to finish!
  • what about fish? that is always quick and easy.  i have a great tilapia recipe and a great salmon recipe in my blog...just click on "fish" tag on the side
  • Oh if you are in need of a FABULOUS pasta dish, let me know.  I make this stuff called Chili-Ghetti.  Its basically spaghetti with chili.  Not with spaghetti sauce though.  It has tomatoes, garlic, lots of cheese, etc.....it is divine and the most awesome winter dish!

  • I was going to suggest fish also. Broiling salmon takes no time at all. You can serve it with veggies and rice. Here is a broiled salmon recipe that is very yummy that I have made in the past (for 2 fillets):

    Cut up some scallion and fresh ginger and mix that in a bowl with reduced sodium soy sauce (about 4 tablespoons) and honey (about 2 tablespoons). Pour about 3 tablespoons of the marinade over the the salmon and put in the fridge for about 15-20 minutes. Then broil the salmon for about 10 minutes in oven. In the meantime, if you want you can cook the remainder of the marinade so that it caramalizes into a glaze that you can put over the finished salmon. You can also lightly toast some sesame seeds in a dry skillet pan and sprinkle that on top of the finished salmon.

    It's very easy!!!

    LOL.....MH is a lactard, too, and calls it such as well.  I've never heard anyone else call it that!

  • Do you have a slow cooker?  I'm all about slow cooker pot roast.  Easiest thing ever.
