Need your dessert recipes...

I'm having out of town company this weekend and I'm serving them mostacolli. I need a simple, but nice dessert to go with the meal, preferably one that I can make ahead of time. Healthy is optional.
Thoughts?

Don't know if this isn't simple enough but what about an Italian dessert? Like Tiramisu... This recipe is awesome!

Toss some tart apples (2 large would be good for 3-4 people) with 2 heaping tbsp brown sugar (I use brown splenda), the amount of cinnamon that looks good to you, do the same with vanilla extract, and a sprinkle of lemon use. Bake for about 25 minutes. Top with marscapone, let it get to room temperature before serving. You can top that with maple syrup or honey...in fact, if you use maple syrup, use maple extract rather than vanilla (or toss the apple mixture with a bit of syrup) to carry out the flavor.
This might be too simple but I mix mascarpone cheese and powdered suger together to make a dip. (You can also add chocolate chips) It sort of tastes like cannoli filling, I always serve it with Nilla Wafers and it's delicious!
*There really isn't any precise measurements, I usually start out with a little sugar and add more according to how sweet you want it to be.
*Also, just an FYI if you have an ALDI around you I would buy the mascarpone cheese there...it's literally half the price of anywhere else!
