Healthy Recipes?

Morning!

I'm planning out our meals for the week and I'm looking for a healhy chicken recipe. I'm sick of making the same dry rub chicken all the time with veggies on the side. Does anyone have any good go to recipes that they use for chicken that are easy to make during the week?

  • I have a few WW recipes that I enjoy-- a balsamic chicken one and a carmelized onion chicken recipe that are easy to make. I can post them if you want (just lazy to do so unless you want them!).

    I'd love the carmelized onion recipe. PM if that's easier! Also, looked at your blog and those pics look amazing! I'm going to try the garlic knots and the cranberry muffins!

    Ok so I lied... it's from Cooking Light (not WW) -- I make this one all the time.

    Caramelized Onion Chicken


    1 pound chicken breast tenders
    1/2 teaspoon salt
    1/4 teaspoon freshly ground black pepper
    1 teaspoon olive oil
    1/2 cup sliced onion
    1/2 cup seedless raspberry jam
    1 tablespoon red wine vinegar
    1 tablespoon low-sodium soy sauce
    1 teaspoon bottled minced ginger
    1/2 teaspoon dried rosemary

    Sprinkle chicken with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add onion, and saut? 2 minutes. Add chicken to pan; saut? 8 minutes or until chicken is done. Remove onion and chicken from pan.

    Add jam and remaining ingredients to pan; cook 2 minutes, stirring constantly with a whisk. Return chicken mixture to pan; cook 4 minutes, stirring occasionally.
