Anyway, I thought that since we're all nesting now, we could share our favorite cold weather recipes. Here is a soup we love that's really easy (because most of it comes from a can"
Mexican Chicken and Corn Chowder (it's actually a little thin to be called a chowder, but it's delicious)
In a pot, stir together:
2 1/2 cups cooked chicken breast
2 cans cream of potato soup
2 cans of corn (we use one regular and one mexi corn)
1 can rotel
3 cans chicken broth
1 can chopped green chiles
1 pgk taco seasoning
Simmer for a bit, then add
8 oz velveeta
small container of sour cream
cilantro
Heat until cheese is melted and soup is smooth. We usually top ours with shredded cheese and tortilla chips.

I've become addicted to my slow cooker since I got it as a wedding gift. I just tried out this chili recipe:

I used ground turkey instead of beef just because that's what I prefer, so I can't comment on how the full out beef chili flavor is. I did like how it turned out with the ground turkey though. I don't know that it's my absolute favorite chili, but still good and very easy. It's very thick, not soupy, so if you like yours more soupy you should add more liquid. Oh, and I forgot to buy tomato sauce from the store so I used 1 cup of Prego pasta sauce, haha. I don't know how much of a difference it made, but I'll try it with just regular tomato sauce next time. Some of the reviewers also suggested adding a little bit of sugar to help even out the flavor, but I didn't do this since I used the pasta sauce which is sweet by itself. I ate it with some tostitos scoops and a little bit of cheese, yummm.

I thought that was pretty delicious too. It's not completely a stroganoff flavor, but still good. I adapted mine according to the reviews and added 1/4 c white wine and half of the chicken soup to the crock pot while the chicken was cooking. I used fat free cream cheese, and personally couldn't tell a difference, but I'm also used to eating low fat so I might just be adapted to that (H always complains and says he can tell, but he eats it anyway, hehe). I ate it over egg noodles. Mmmmm
