Re: Entertaining cookbooks
If expense isn't a huge concern for you, you should consider hiring a caterer. It's not that it's impossible to serve dinner to that many people, but unless you have the time and equipment to cook all of it, keep it hot and get it served at the same time, you're going to run into trouble.
If nothing else, I would hire a few extra sets of hands to help you prep food and get it served.

It consists of filet mignon with a lemon, chive and parsley butter, saffron risotto, mixed baby greens with oranges and fried goat cheese medallions and raspberry cream pavlovas for dessert.
ETA: If you're still looking for books, I would try some of Martha Stewart's entertaining books. I've never been disappointed by her food and it tends to be more formal and gourmet, which would work better with your plans.
I'd also have it catered or hire help. I did a buffet for 50 and could not have done it, period, without the 2 girls I hired.
I adore this cookbook for gourmet southern food. Every recipe I've made from there has been out of this world fantastic. Be forewarned that they aren't quick and easy, whip up with shortcut prep items type recipes. They require time and quality ingredients, but the end result is so worth it.
