NOLA Girls

We are "All Saints All the Way" on Sunday and I am making some good ol' NOLA grub for the party. My sister is making her signature Muffeletta and I was thinking I wanted to do something crockpot stable... not sure if I want to go Jambalaya, Etoufee or Gumbo. I need your expertise for what I absolutely have to have for my NOLA feast. We are doing cajun wings and shrimp as well.

  • any of those things are perfect!

    gumbo may seem the hardest, but its real simple if you can get the roux down. i just mix equal parts oil and flour and stir it constantly on medium high heat until it thickens and darkens. once mine is a dark reddish brown, i add the water. i dont put too much water at first because we like it thicker at my house, but it depends on your preferences. if you chicken and sausage, i like to season my chicken and bake it first - i find it keeps the seasoning better and it keeps all that extra oil out of the gumbo.

    i never make jambalaya, so i cant help you there.

  • oooh and if you want something fancy with the shrimp (and quite unhealthy but AMAZING), take an oyster, sandwich it in between 2 shrimp, wrap a bacon around it all, and deep fry it. OMG it is so freakin delicious!
  • This is Emeril's recipe for sopapillas, but i call them beignets. Make sure you nuke the milk for a minute or so and i use peanut oil instead of vegetable oil. and dont forget to sprinkle them with powdered sugar. My friends rave about them and I have thought about selling them on more than 1 occasion :) Enjoy!Ingredients1 package active dry yeast11/2 cups?milkimage1/4 cup?sugarimage1/4 cup melted unsalted butter1 large egg4 1/2 cups all-purpose flour1 tablespoon cornmeal1 teaspoon?saltimageVegetableimage?oil, for fryingHoneyDirectionsIn the bowl of an electric mixer fitted with a dough hook, combine the yeast, milk, sugar, and butter, and mix well for 2 minutes. Add the egg, and mix well. Add 4 cups of the flour, the cornmeal and salt. Beat at low speed until all the flour is incorporated, then on medium speed until a ball of dough forms, adding more flour as needed if too sticky.Remove from the mixer, form into a ball, and place in a lightly oiled bowl. Cover and let rise in a warm place until nearly doubled, about 1 hour.Turn out the dough onto a lightly floured surface and pat into a thick rectangle, about 1-inch thick. Roll out until about 1/4-inch thick, and with a sharp knife, cut the dough into squares, about 2 1/2 to 3 inch-square.Heat the fryer to 360 degrees F.Drop the dough into the hot oil, being careful not to overcrowd the sopapillas as they are cooking, and turning them constantly to cook on all sides until golden, about 3 minutes per batch. Remove the sopapillas from the oil with a slotted spoon and drain on paper towels.
  • I had a bbq shrimp poboy the other day that was TO DIE FOR good. 

     Easy to make too, I can give a recipe for the sauce, but basically it's butter (I didn't say good FOR you, I said good), garlic, worchistere (sp?) and spices. Saute some shrimp in that. 

    Here's the best part, take french bread or pistolettes, hollow out the inside, leaving a pocket, ladel in the shrimp and buttery goodness and eat. It's so damn good.

    I have no idea why we refer to this as bbq shrimp, since it has no resemblance to a bbq sauce, but it's exactly what i expect to taste when I hear it. It's usually served with the head on and you just get messy and eat the shrimp and dip bread in, but this does it all for you and mmmm....

  • Thanks!! Those sandwiches sound off the chain ladies! I am sold on the Gumbo route. My sis and I were just talking about sopapillas last night so I guess this is a sign that it's a must make!

    you right girl isnt that dumb! Senator vitter sent a letter to the nfl saying that he was printing "who dat say they cant print who dat" shirts and they can just go ahead and sue him lol. I ordered 2 haha! They never had issues with the phrase before, bunch of money grubbing fools!

    Yeah I heard about the shirts!  I could see if they were putting the saints logo since that's licensed by the nfl and the nfl only, but they don't own a catchphrase!!!
