Pick my potluck item

Ok, I'm going to my first book club meeting tomorrow and we're supposed to bring a dish. There will be quite a few people there (inlcuding stephriz!).  So far, people are bringing sweets, dips, fruit and veggie trays, pinwheels, "something savory", etc. Everyone says there are a ton of sweets already, but I only see like 4 of 30 people with desserts.  What should I bring? I want something easy, but good. My standby is cookies (I have some premade dough from a fundraiser, so already paid for). Should I do that or you want to give me some ideas?

  • I always bring what I want to eat, in case everything else is gross (it happens).  I say bring the cookies.  People like cookies.
  • Fundraiser cookie dough is SOOOO damn good. Just do that and call it a day. Bring something fancier at the next meeting.

  • I usually aim to bring something savory and substantial. Potlucks are tough, especially mid-week, because inevitably time runs short and people are left running to the store at the last minute to grab something quick. There are ALWAYS more desserts than what people signed up for. It usually turns out too that there is more appetizer type items than anything else for the same reason. I usually try to keep those things in mind when I'm choosing my potluck dish. I also like to feel like I brought the best dish at the gathering, so I aim high! Lol 
  • My brain is and will be on tomorrow's interview moreso than food, so I'm not aiming all that high ;)

  • Didn't you have really good ideas for your last party?  Like a fruit salsa and something else? 

    I'm bringing black bean dip, which is random tex mex ingredients marinated in garlic and lime so that it's a big fiesta on a corn chip.

  • Haha, yeah, all of my ideas are complicated. The fruit salsa and chips required like 5 different fruits, some fresh, some frozen, jam, etc. and making the chips from scratch. Took me a couple hours to prep the salsa and bake the chips.

  • Well Sandra Lee it and make the salsa and buy the chips.  But wasn't there something else you were making?  Like peanut butter dip for chicken? 

    What about a casserole?  Wild rice casserole?  A pasta bake? 

    I'm really just brainstorming foods I would like you to make for me.

  • Haha! Um, I'm gonna say no on the pb dip, doesn't sound familiar. I guess I could do a casserole. HEB makes these soup kits that you can turn into a casserole with the addition of a cup of rice. I made tortilla soup casserole the other week. I've been wanting to try the Texas ranch soup casserole....

    Oh, and the chips for the fruit salsa are sugar and cinnamon tortilla chips. AMAZING! I don't know if store bought would do the salsa justice.

  • My love for HEB rivals my love of the Olympics.  The soup casserole sounds promising--and it would be a nice hearty item to accompany the dips and sides.

    OOOOO!  Cinnamon and sugar chips with fruit salsa sounds amazing.  That will stay on the wish list for future events. 

  • If you want to do easy, I would go the cookie route.  If you want something more substantial, a casserole, pasta bake, pot of soup/chili is always good at a potluck.  A crockpot full of shredded pork or chicken is super easy, add some cocktail rolls and you have mini bbq sandwiches. 

    Easy appetizers: you could do chips/dip (more substantial if its hot, i.e. crab dip, spinach-artichoke dip, jalepeno popper dip, buffalo chicken dip).  Meatballs in a crockpot would be easy (you can buy them frozen and just add sauce or make your own), sausage-cheese balls are always popular as are crescent bites (spread crescent roll dough or puff pastry with cream cheese mixed with bacon, green onions, etc, roll them and bake but they are better hot so that might not be great logistic-wise).

    If I ever invite you to one of my house parties, I promise to make fruit salsa and sugar cinnamon chips. :) They were pretty awesome.
