I want to make these to take to a super bowl party. I googled some recipes and there are tons of different ways to make this.
How do you make yours?
TIA!
Re: Tortilla roll-ups?
I really don't have a recipe, just kind of throw things together, but you just gave me an idea of how to use a garden dip I just ordered online! Woo!
2 8oz packages of cream cheese
2 pouches Hidden Valley Ranch powder
2 green onions chopped
1 can green chilies
1 jar diced pimento
1 can sliced black olives
Mix cream cheese, with onions and ranch, spread on tortillas, sprinkle chilies, pimento and olives on top, roll up wrap with both foil and wax paper to hold shape, chill at least 2 hours beforehand. These was always loved!

These sound so good! I actually signed up to bring these to my MOMs group valentine party. I think I'll use this recipe but make a few adjustments to make it more kid friendly.
Thanks for posting the recipe Kim!
Mmmmm...roll-ups!
What everyone always makes me bring is soooo simple:
* jar/ can nacho cheese
* can of Rotel tomato w/ cilantro (tomato w/ chilis is a bit too spicy for me)
* can of refried beans (I like to mix a couple tbsp of tomato w/ cilantro into the beans too...makes the beans easier to spread...and I eat the rest of the beans this way!)
* green onions (chives)
On 1/2 of each tortilla:
Spread thin layer of refried beans, top with nacho cheese & tomatoes w/ cilantro, sprinkle with diced chives and roll - refrigerate for at least 60 minutes, then cut the tortillas into bite-sized pieces (about an inch thick).
(I save the ends for my late night snack because a lot of times these are gone before I've had a chance to get any!)
Now I must go eat lunch!
