Spring rolls and salads with green beans
We're running a little low on stock...
We got pizza last night but I'm probably not going to be in the mood for it.
Both DH and I have been sick and have not gone grocery shopping so we will be picking up a rotisserie chicken and I'll make some mashed potatoes and a veggie side.
Tonight it's leftover homemade chicken soup (again... we've been eating it on and off for over 2 weeks, this is nearing the end of the 2nd batch), but I had ginger lime haddock and citrusy roasted leeks (I left out the hard boiled eggs, DH doesn't do eggs) and citrusy couscous (with orange zest) the other night, that was delicious and easy.
I also made a good pork roast with black pepper and herb dumplings a week ago- it takes some time, but isn't really that hard- just a lot of waiting for it to cook. (it's a Bobby Flay recipe, which is linked in the blog post, he just doesn't have any pictures of the dish) Pork chops stuffed with apricots, is another of my favorites (I like to serve it with sage or thyme polenta, the cream sauce is really good over the polenta)
I'm trying to think what to have tomorrow, we have a ton of pork (roasts and tenderloin and bone-in chops), and I think at least 2 chicken breasts. I'm eating mostly low-calorie lunches, so I think I can afford a bigger dinner. Except today, when I had a bagel with cream cheese and 4 little nutella cookies, talk about carb overload.

We've been on a kick of Chicken Lettuce Wraps lately. We received "America's Most Wanted Recipes" Cookbook aka Restaurant copycats, so these lettuce wraps are *almost* as good as P.F. Chang's.
Also, on a side note, do you feel like as newlyweds you get a lot of cookbooks the first couple years? We have these first two years and its nice but we might need an entire SHELF for all of them soon!
Thanks girls! I ended up doing ravioli w/ homemade sauce & baked procuitto/ mozz. I'll have to use some of these soon!
And buckeye, I agree. I have so many cookbooks, but I feel like most of the time I feel like I don't use the recipes.
