Good morning all! I hope you had a great weekend. Did we all catch the Superbowl yesterday? I didn't have a favourite team, but I am glad for the Saints that they won...first Superbowl ever! Good on them!

Now for the menu:

Monday: Open Faced Chicken & Pepper Sandwiches with spinach salad;

Tuesday: Mediterranean Vegetable Stew w/ crusty bread;

Wednesday: Leftovers;

Thursday: Tuna & Artichoke Open Faced Sandwich with fries;

Friday: Chipotle Turkey Burgers w/ corn and potatos.

    DH and I are going to have a strange week... Tonight I am not sure if he will be back (he's out of town and has car trouble Tongue Tied

    Tomorrow I have art class so it's always a quick meal! We are planning on taking the rest of the week off to paint our front entrance and media room, and I think we are going to treat ourselves by going out to eat!!

  • We are just starting weekly meal planning - so I hope to be posting every week now! Oh and we are vegetarian so our meals are all meatless - and we are open to any suggestions to get more variety in our meals!

    Sunday - Tex-Mex Shepherd's Pie (with Mexican Ground Round)

    Monday - Leftovers

    Tuesday - Homemade Veggie Pizza

    Wednesday - Chicken Parmesan with Meatless Chicken Breasts w/Green Beans and Rice

    Thursday - Potato and Leek Soup with Homemade Buns

    Friday - Veggie Burgers and Salad

    Saturday - Out for dinner...in-laws are visiting :)

  • Wow - after making a return to the nest after a long hiatus - you ladies are organized...

     I did the shopping yesterday, so I guess I do have a weekly menu (though I tend to improvise and move things around or get take out based on how busy my work day was and how late I get home - it sometimes hard to try and make sure we eat dinner before 8:30pm).

     Monday - Leftovers (fish & black bean salad) with a salad

    Tuesday - Glazed Pork Chops with potatoes & veggies

    Wednesday - Peanut Chicken Stir-fry with Brown Rice (prepackaged Longos meal)

    Thursday - Duck Confit, veggies, and risotto

    Friday - whatever is left, pasta, or something from the freezer.

     

    Wow - who knew, I too could be organized!

  • not sure what this week will be like, I have been unwell and contractions like crazy so we will see if it all turns out for us!

    Tuesday: Baked fish and unfried fries

    Wednesday: Homemade broc & cheese soup with homemade biscuits

    Thursday: Meatless spag

    Friday: Dinner out

    Saturday: Unsure yet most likely leftovers

    Sunday: Dinner at IL's

    Monday: Hamburger soup

    Tuesday Off for my section so the boys are on their own but the freezer is all stocked up with goodies for them!

    This is an awesome open-faced sandwich that we've had for dinner alot. I usually serve it with home made sweet potato fries. The first time I served this to Dallas, he didn't know there was no meat on it! lol

     Monday: Poached salmon with mixed greens

    Tuesday: BBQ chicken and salad

    Wednesday: Ian's on his own - I'm at work - I think he's making stir fry with bok choy and rice noodles

    Thursday: Spaghetti with meat sauce (chicken instead of beef)

    Friday: Probably leftovers, I'm working till 9

    Saturday: Grilled steak and sweet potato fries

    Sunday: Chicken rolled-up with ham & swiss cheese, with asparagus

  • already had to improvise - DH will not ben home from work 'til after 8, so I'm on my own tonight and will just grab something from the freezer.
