Good morning all! I hope you had a great weekend. Did we all catch the Superbowl yesterday? I didn't have a favourite team, but I am glad for the Saints that they won...first Superbowl ever! Good on them!

Tuesday: Mediterranean Vegetable Stew w/ crusty bread;
Wednesday: Leftovers;
Thursday: Tuna & Artichoke Open Faced Sandwich with fries;
Friday: Chipotle Turkey Burgers w/ corn and potatos.

DH and I are going to have a strange week... Tonight I am not sure if he will be back (he's out of town and has car trouble
Tomorrow I have art class so it's always a quick meal! We are planning on taking the rest of the week off to paint our front entrance and media room, and I think we are going to treat ourselves by going out to eat!!
We are just starting weekly meal planning - so I hope to be posting every week now! Oh and we are vegetarian so our meals are all meatless - and we are open to any suggestions to get more variety in our meals!

Wow - after making a return to the nest after a long hiatus - you ladies are organized...
I did the shopping yesterday, so I guess I do have a weekly menu (though I tend to improvise and move things around or get take out based on how busy my work day was and how late I get home - it sometimes hard to try and make sure we eat dinner before 8:30pm).
Monday - Leftovers (fish & black bean salad) with a salad
Tuesday - Glazed Pork Chops with potatoes & veggies
Wednesday - Peanut Chicken Stir-fry with Brown Rice (prepackaged Longos meal)
Thursday - Duck Confit, veggies, and risotto
Friday - whatever is left, pasta, or something from the freezer.

Tuesday Off for my section so the boys are on their own but the freezer is all stocked up with goodies for them!
This is an awesome open-faced sandwich that we've had for dinner alot. I usually serve it with home made sweet potato fries. The first time I served this to Dallas, he didn't know there was no meat on it! lol
