Frozen lemon pie recipe?

Does anyone have laying around the recipe for the lemon pie that has lemon juice, condensed milk, and cool whip in it? I am hosting a shower for a friend next week and have misplaced the recipe. TIA!

  • Here's my recipe, which makes two. You can always cut it in half, I've just never had left overs even with 2 pies.

    Ingredients:
    3 healthy limes (1 for zesting, the other two will be used for ingredients and decoration)
    1 large bottle lime juice
    1 lemon
    4 packages cream cheese, softened (can use low fat but absolutely not fat free!)
    1 large tub cool whip, thawed
    1 can sweetened condensed milk
    2 pie shells (graham cracker or shortbread or ginger snap)

    Mix Together:
    cream cheese
    coolwhip
    sweetened condensed milk

    *mixture will start off kind of chunky, dont worry, you'll be mixing it forever, it will become smooth...


    zest 1 lime and the lemon, add to mix

    With the two limes you haven't zested you want to cut 2 full circles out of the center of each, these will be used for decoration, so set them aside, then juice the remainder of the limes and lemon

    To your mix add:
    lemon juice
    enough lime juice for desired tartness (will take probably a bottle or more... I like mine tart though)

    Mix until smooth, pour into pie crusts

    Now for the decoration, take your lime wheels, make a slit from the inner rind on top all the way down and through the other rind, twist it, and repeat. I make pinwheels for the tops of my pies this way. It's not necessary but it's a cute touch. You could also put either some graham cracker crumbles or lemon and lime zest on top, or some gummy lime wedges.

    leave in fridge until ready to serve... takes about 2 hours to stiffen

  • Also, mine doesn't have to be frozen, just refrigerated.
