That risotto looks AMAZING. My husband is a vegetarian, so I'm thinking of making that for our Valentine's Day dinner (substituting with vegetable stock or fake chik'n stock). If I get brave enough (a - to make it, b- to share the outcome), I'll let you know how it turns out

I'm going to continue the theme of "Ask the Expert."
Do you think your stuffed green peppers could work as a casserole? I would cut the peppers into big chunks, mix them with the other ingredients, and bake them in a glass baking dish. Does that sound like it would work?
I'm not a big fan of stuffed peppers, but the recipe sounds so good.
