Do you know where you're staying yet? We spent two nights at the Hilton Waikoloa Village and one night in Hilo. Hilo was nothing spectacular; I don't recommend it. The Hilton was our splurge hotel on our honeymoon, so once we were there we pretty much just relaxed at the pools on site and walked around the grounds (it is gorgeous). We had a fancy dinner there but while the food was good, the service was unfortunately really poor. Our waiter was so rude.
We spent an afternoon walking around Kona, and stopped in to a bar where they had the Red Sox game on to watch a few innings. I'll have to see if I can find the name of it somewhere. We had some good appetizers and enjoyed a great view of the TVs and the ocean. Kona was a cute town. They had a farmers market going on the day we were there so we checked that out for awhile and bought some local produce.
Definitely spend some time at Volcano National Park. I wish we had given ourselves more time there.
We drove from Waikoloa to Hilo via the East side of the island, and stopped along the way at a few beaches and scenic points. I think if you do some inland hikes you can get to waterfalls, but we didn't plan anything out ahead of time so we missed them. The southern route from Kona to Volcano National Park also has some waterfalls, as well as a black sand beach. I didn't go that way but my sister did on her last trip and her photos were beautiful.
Another thing to note on the Big Island is that there is very little light there after the sun goes down, because of the observatory on Mauna Kea. They have restrictions on light pollution so that they can see the stars better. So once the sun goes down you will probably just want to hang out near or at your hotel. DH and I went for a drive after dark the first night we were there and it freaked me out to no end. We were driving basically along a patch of dried lava with no streetlights and a winding road. I thought we were going to die.
We're staying at the Keauhou Beach Resort.
Here is our current "itinerary":
Day/Night 1: Fly in, chill at hotel.
Day/Night 2: DH will be scuba diving in the morning, I'm going to snorkle at the tide pools at the hotel. Then we're going horseback riding by Waipio Valley in the afternoon.
Day/Night 3: Driving to one of the black sand beaches on the south shore on the way to VNP for the day.
Day/Night 4: Driving the northern and northeastern coast checking out the sites and waterfalls and stopping in Hilo. Hopefully star gazing on Mauna Kea on the way back. That will depend on if you want to drive in the dark. We'll see.
I'd also like to check out one of the Kona beaches at some point and the manta rays by the Sheraton.
