Puffy Oven Pancake.
Yum.
I've been craving pancakes for the past week or so and these really hit the spot, and then some! They may be my new favorite thing.

Oooh, please share what this is. Sounds so tasty, but I've never heard of this sort of pancake.
FYI - I crave pancakes on a regular basis!
Ok its...
2 tbl. butter
1/2 c. flour
1/2 c. milk
2 eggs
1/4 tsp. salt
Preheat your oven to 400 degrees, put the butter in a 9" pie dish to melt it. Brush the melted butter on the bottom and sides of the dish. In a bowl, lightly beat the eggs. Beat in the flour, milk, & salt. Pour in prepared pan. Place in oven & bake for 25-30 minutes. Remove & serve immediately, topped with lemon juice & powdered sugar.
There are some variations like - Put 2 tbl. brown sugar & 1/2 tsp. cinnamon in the bottom of the prepared pan (after butter), place 1 peeled and thinly sliced baking apple on top of the sugar, pout batter on top of the apples & bake as directed.
I wanted to make ^that^ one but didn't have any apples so I just added the sugar & cinnamon and it was really yummy.
It puffs up all around the edges and looks really impressive, even though it takes all of 10 minutes to prepare.
