valentines day dinner suggestions?

DH offered to cook for us for vday, since we're broke (though we do have some gift cards we could use...it's just so hectic to go out on vday if the restaurant doesn't offer reservations). does anyone have any good suggestions? i couldn't come up with much besides steak, and just steak didn't seem all that exciting (though, i suppose it could be).

i'm not a seafood lover, or lamb for that matter. any thoughts?

  • Hubs made me this fantastic steak the other night for my bday that I would highly recommend. Came off Rachael Ray's website. You need a huge steak (like 2-3 inches thick) either filet mignon or delmonico, and a whole sprig of rosemary, oil, salt, and that's it. Put EVOO in a grill pan and heat it. Place the rosemary in the pan and the steak on top of it. Sear it for about 5 minutes, flip the steak over and leave the rosemary in the bottom of the pan, sear for an additional 5 minutes on that side. Put the steak in an oven-proof dish and bake it for 20 minutes or until desired done-ness on the inside. When you pull it out, put EVOO on the cutting board before you slice it to keep the board from absorbing any of the juices from the steak. Seriously, one of the best steaks I've ever had. 
  • I suggest going to bettycrocker.com or maarthastweart.com, they both have full v-day menus to look at.

    I think I am going to make shrimp for apps, and salad, chicken parm, and broccoli for entree, and then a choc cheesecake for dessert. They're DH's fave.

  • I think I'm going to try a gluten-free cheesecake brownie recipe that H was drooling over the other day. He promised he'd make a roast, so we'll pair it with mashed potatoes, stuffing and veggies. And wine. Lots of wine. 
  • How about cornish game hens?  We just picked some up today for a great price.  I love those little guys.

  • oooh cornish hens are great! We actually have a recipe that you make the marinade the night before and let them sit, then the next day all you do is cut up some veggies, put that in the bottom of a roasting pan and bake the hens on top of it. It's H's favorite way to eat veggies lol. It's actually a pretty quick weeknight meal, too.
