We currently have the straw-looking mulch, but its worn away pretty quickly, and, to be honest, I don't like the look of it with our landscaping. We're planning to do some work soon, and I just wanted to see if anyone had any suggestions about the type of mulch to use? (ie: bark, rubber mulch, etc...)

don't use inorganic mulch (like rubber). It's not going to do anything for your soil & if you want to replant ever, it'll be a pain b/c you'll need to remove it first.
I, personally, use use leaf mold as mulch. I have to reapply every year (sometimes more often).
If you prefer the look of bark, go with that.
Ditto this. Same goes for rocks.
I, personally, stick with pine bark mulch. Hardwood not only smells (IMO) but it tends to be more prone to fungi growing in it over time.
