I need help thinking of what I can have for our friends the day of our move. We're meeting at 9, and I originally thought bagels or muffins or something, but no one will stop and eat when they get there.
So we're doing lunch for them. FIL/MIL are being super nice enough to bring up shredded beef, but I'm not sure what else to have with hot beef sandwiches. Obviously, we're trying to keep it fairly easy, and something we don't have to cook/make the day of.
This Broccoli salad is always very popular, plus it's a good alternative to plain coleslaw (less runny, as well, which is good when not everyone will be sitting at a table while eating, and everyone loves it - with the salty/sweet combo of bacon & raisins):

But what else can we have? I've thought of just picking up some potato salad from the store, but can't get over the thought that then we're offering two sloppy, dressing-ed dishes.
Is it just me overthinking it with that thought or does that seem weird?

I love this salad. I normally serve it in the summer, but it really is great. It's not a mayonnaise dressing either and very simple to make.

You can make it the night before and just add the dressing the day of.
That looks really good; I can see every single one of the people we're having help us ignore it though. LOL It's "too healthy"... I'm pushing it with having a broccoli salad!
This is my plan. I'll bust out the nicer/better food when we do our summer/housewarming party (after I register and send out reminders on FB of course).

If the broccoli salad is pushing it on the healthy side with these people and you're already committed to doing the sandwiches then maybe just throw some fries in the oven and to serve with the salad and sandwiches.
Otherwise I agree you should just go the easy route of pizza. Or even a sandwich tray from JJ or Subway if you wanted to go a little healthier.

Bust out nicer/better food?!?! They seriously can't expect you to cook for your own party, can they?!? They should be bringing you gifts, food, and refreshments. Potluck, Duff, potluck...
Shiit...remember how I said I needed to save the original post so I don't forget? I better save this one so I don't make the mistake of serving good food at the party. Those people had better bring amazing food and great alcohol.
