Tasty... wednesday?

Yeah I know it's typically Tasty Tuesday for recipe sharing, but I don't think I've ever shared this recipe with you ladies and it's so good!

DH and I made it last night - so yummy! Every time we make it we always like it more than the last time + we wonder why we don't make it more often.

We grill some chicken breasts to add in, which makes it much more filling.

Seriously, this is one of my faves to make for dinner. It's so easy and delicious.

  • Oh, the recipe calls for lemon juice to put on the avocado so it doesn't turn brown. Well the lemon juice actually also adds a lot of flavor to the dish, the acidity really does something good here. We didn't have a lemon, so I just added a splash of balsamic vinegar and it was soooo good. The avocado never makes it long enough to be in the leftovers, so browning isn't a problem. Stick out tongue

  • that looks SO GOOD!  Unfortunately DH wouldn't have anything to do with it...so I might just have to make it for myself when he won't be expecting dinner.
