Please post here- just your absolute favorite! (I am a loser and not on facebook so I can't look up the Oct. 09 knottie cookbook).
My husband decided to give up meat for Lent and I need help coming up with recipe ideas!

Also, does seafood count as meat?

Check out cookinglight.com. About 99% of things I make come from the site/magazine/cookbooks and I have never been disappointed. Just search for Vegetarian, TONS of stuff comes up.
I also make a variation of this bean casserole without the bacon, http://allrecipes.com/Recipe/Five-Bean-Casserole/Detail.aspx DH doesn't like it, but I make a big pan of it and eat it for lunch all week. Also, you can use just about any type of beans you want, not just the ones they have listed...just make sure you use the baked beans.

Taco Chili Soup -
1 15oz can of black beans
1 15oz can of red kidney beans
1 15oz can of corn
1 15oz can of diced tomatoes
1 15 oz can of zesty tomatoes (has jalepenos or chili peppers in it)
1 packet of ranch dressing (powder)
1 packet of taco seasoning (powder)
approx 45 oz of water (about 3 of the cans full)
1/2 bag of Morning Star Veggie Crumbles
bring all ingredients except the veggie crumbles to boil, then simmer about 20mins. add the veggie crumbles and simmer another 5-10mins
(the can sizes are approximate). It goes really good with corn bread!
DH is a veg, so we never eat meat at home. However, if you get Boca brand italian sausages, you can make our FAVORITE dish:
2 cans unseasoned, unmarinated atrichoke hearts
1/2 chopped white onion
2 cloves garlic, minced
1 pkg (4 links) veggie sausages, browned
1 box farfalle pasta, boied until al dente
Simmer the onion and garlic in 3 tbsp EVOO until onions become clear. Add artichoke hearts and break apart with wooden spoon. Pour in about 2/3 cup of EVOO and 1/4 cup white cooking wine. Simmer for about 5 minutes. When pasta is ready, top with browned sausages, pour veggie mixture over top and stir. Serve in large bowls with romano cheese.
Seafood is cheating! They have eyes and feelings...just saying (I'm veggie, though).
Almost anything with meat in it can be made vegetarian--just substitute the meat with Quorn, seitan, tempeh, or any other meat substitute. There's even an awesome soy-rizo for chorizo con huevos or whatever else you may want to use it in.

Most of my vegetarian recipes involve beans and grains and just sprinkling and mixing in whatever else I have in the house... those are always the best dishes and the hardest recipes to share.
Tonight I made salmon in a new way and it was really good.
Place salmon in a large skillet and just cover with water. To your taste, add a bay leaf, pepper corns (I probably used about 1/2 teaspoon), sliced lemons (I used two tiny ones) and sliced onion (I used a half of a small red one). Simmer until fish flakes.
