I have to go to a potluck tomorrow and I want to make mini-pumpkin cheesecakes in my mini-muffin pan.
I can't find any pumpkin cheesecake mini muffin pan recipes (lots of special mini cheesecake pans, apparently), so I'm thinking of just using a regular pumpkin cheesecake recipe and just cooking it for way less time. So instead of an hour or more, I'll start with 10 minutes and check it every few minutes after that.
Is there anything I am not thinking through enough here?
And can you recommend a pumpkin cheesecake recipe that might be good?
Re: NER - Baking experts
That should be fine, just keep a good eye on it (without letting the oven cool too much from opening it) and be sure to grease well. I'd be a little concerned about getting them out of the muffin pan - I think paper liners would be the easiest way to solve this.
Pumpkin is the only kind of cheesecake I like, but I haven't tried it myself, so I don't have a good recipe.
I don't have a mini pumpkin cheesecake recipe, just ones for big cheesecakes. Can you find a recipe for pumpkin-cheesecake bars? The filling for those may be closer to what you're looking for.
Ooooh oooh!
