When it's Greg and I, I cook exact portions. (Two chicken breasts weighed out before hand, etc. Vegetables weighed out, etc.)
So we have company for dinner this coming Monday. And I never know how to treat the situation. (I was raised to make A TON and expect people to leave STUFFED. But I hate it when people do that to us, so am trying not to be too lean with how much/what I offer, but not too much so as people avoid it because they're uncomfortably full.)
It'll just be Greg, myself, and this friend (a guy). Here's what I was thinking:
Salad w/bacon, broccoli, baby corn. (Typically tossed with bottled Italian dressing but I think I might try to find a recipe for a homemade Italian vinaigrette.)
Individual Beef Wellingtons w/asparagus or green beans (whichever looks better when I go shopping)
Dessert (no clue... this friend eats fairly well, so I'm not sure what to make.)
I'm so used to how Greg and I eat, I'm not sure if this won't be enough food. But neither do I want to add much more.

Since he eats pretty well, I'd just go with the way you usually do things for you and Greg.
Edit: Unless I misunderstood "well"...if he's healthy and into healthy food, do the usual. If he eats "well"...meaning "a lot" then you should make a littl extra.

I would probably just make his portions about 1.5 times more than yours. That way, if there are left overs, it's not a lot and he also won't feel as bad if he does want seconds.
For DH and I, when we are at other people's houses for dinner we tend to eat on the lighter side, so we don't look like "pigs" who haven't eaten in days. There is always more than enough food but we just don't want to come across as grabby.
So looking at what I posted... if you and YH came, would you or he feel like "Man... that's IT?"
And yes - well = pretty healthy 95% of the time.
No, it'd probably be a relief because at family dinners there is more than enough food to feed each person three times.
I think with what you are planning to have it's more than enough. If you just put out the meat and a few beans, maybe. But the salad and desert make it a full, well rounded meal.
Every "menu" I find to go with wellington has potatoes, but wellington is puff pastry wrapped around beef tenderloin. Uh... puff pastry = starch. So while potatoes seems to be the popular accompaniment, starch overload! LOL
