1 bag (32oz) frozen hash brown potatoes
1 lb bacon diced, cooked and drained; OR 1 lb cooked ham; OR 1 lb bulk sausage cooked and drained (i use bacon and sausage)
1 medium diced onion
1 diced green bell pepper
1 1/2 shredded cheddar or monterey jack cheese
1 dozen eggs
1 cup milk
salt and pepper to taste
Place a layer of frozen potatoes on the bottom of the slow cooker, followed by a layer of meat, then onions and bell pepper, then cheese. Repeat the layering process 2 or 3 times, ending with a layer of cheese.
Beat the eggs, milk, salt and pepper together. Pour this over the layers, cover and cook on low 6-8 hours. Voila! It's SO easy and delicious and it makes ALOT! Enjoy!?
