Since I'm trying to organize my Life....
Would anyone like the start Menu Monday's with me? Where we all post our weekly menu if you want to join in or we an just bounce ideas off each other? I think this will help me stay accountable and have a menu planned or every week. Let me know if your interested and if you are I'll start the postings next week!

I usually do my menu over the weekend. I can tell you what I have planned for the week. I would love to hear what people are planning. Give me other ideas.
Monday - Lasagna roll up - veggie
Tuesday - shephards pie
Wed - pasta with veggies and a red/white sauce (can't remember the name)
Thur - Pork Chops
Fri - leftovers
I froze almost all these meals over the weekend. Wrote instructions for DH. When he comes home he can pop them in the oven until I get home. When I get home dinner is ready. This way an hour later I can head to the gym.
I usually do this on the What's cooking board, but here's what I got lined up this week. I'll provide the links if I can. Most weekday meals take me about 30 to 45 minutes, and Fri/Sat/Sun - are little more elaborate meals for us.
Mon - Veal, Pork & Porcini Bolognese Sauce with Wheat Pasta, & Salad
Wed - Greek Chicken Pitas, Tzatziki Sauce, Couscous & Grilled Veggies
Thu - Gouda Cheese Souffle & Salad - original recipe uses Blue Cheese, but I'm using Gouda...cuz that's what I have in the fridge, and I love this cheese.
Fri - Butternut Squash Risotto & Salad
Sun - Pork Wellington - roasted asparagus, & mashed potatoes
Here's my menu:
Sunday - Teriyaki chicken drummettes with green beans and brown rice.
Monday - Grilled chicken with Cabbage Soup.
Tuesday - Turkey Chili
Wednesday - *date night*
Thursday - Italian Sausage (crock pot) over rice.

How do you make a commitment to a meal 6 days in advance? I could never, ever do it!
It actually makes things so much less stressful for me. Between working full time and going to school I would go crazy if I left it to the last minute. I also really like to cook and I like to try a new recipe once a week. This week Teryaki chickenand cabbage soup are two new recipes for me (both are crock pot recipes) . Every week I make my menu and grocery list on Saturday then go grocery shopping on Sunday after church. After grocery shopping I cook 2 or three things so I only have to warm it up during the week. I make enough for Brock to bring to lunch and to freeze some for later. It only takes me two or three hours. And it saves money since I only buy what we need.
This week the turkey chili and Italian sausage are both meals I made a few weeks ago and froze. Yesterday I put the teryaki chicken in the crock pot and last night I prepped the cabbage soup so all I had to do was dump it in the crock pot before I left for work this morning. Tonight all I have to do is grill a few pieces of chicken and make some rice for the meals later this week. And it helps that Brock will eat whatever I cook. He used to be a very picky eater but after he realized how frustrating it was for me he gave in. I even post a menu on our fridge every week to avoid the "whats for dinner" conversation.

Tonight: Terayaki pork tenderloin w/ pinneapple, rice, and salad
Tuesday: Take cousins 5 year old son to Chuck E Cheese for his birthday
Wednesday: Leftover night
Thursday: I have a meeting, DH will fend for himself
Friday: Tortellini w/ marinara sauce & salad
