Great post Lisa, I am in major need of some inspiration, I have been terrible at cooking lately.
We're having leftovers! MH made baked chicken strips last night, we had them with chilli sauce on the side and some lemon baked potatoes.

Wow, everyone's dinner sounds great. I'm still getting over a cold so just some Japanese comfort food for me. Brown rice, umeboshi (Japanese pickled plum), with green tea poured over top.
Hopefully I'll be feeling better later this week and will be in the mood to cook something more interesting!

LOL Ben would love to eat at your house tonight...Subway is his favorite takeout food ever. I think it's just OK (not terrible, but not OMG SO GOOD either), but he looooooves it.
Okay Lisa & Ericka - here it is. I actually got it from a Nestie on the H&F board (Bensbabe). It is DE-lish!
Black Bean Tortilla Casserole
Ingredients
1 cup diced onion
2-3, cloves garlic, minced
1 medium zucchini, diced
1 medium yellow squash, diced
1 large red bell pepper, diced
freshly ground salt & pepper
1 tsp cumin
2 tsp chili powder (or, to taste)
1 tsp Mexican oregano
1 can black beans, drained and rinsed
2 cans diced tomatoes
1 can green chiles (I use the big can)
4 oz reduced fat cream cheese
2 tbsp chopped cilantro
8 6" corn tortillas
1 cup reduced fat shredded cheddar cheese (4 oz)
Directions
Preheat oven to 400?F. Heat a large skillet over medium heat and spray with nonstick olive oil cooking spray. Add the onions and saute for about 5 minutes. Add the bell pepper and cook for about 5 minutes more, stirring. Add zucchini and garlic, and cook for about 8 minutes, until vegetables are softened. Season with salt & pepper, cumin, chili powder, and oregano and stir to coat.
Add the black beans and diced tomatoes with green chiles. Bring to a boil, then reduce heat to a simmer. Cut the cream cheese into cubes and scatter over the vegetable mixture, and stir until all of it is melted in and nicely combined. Finally, mix in the chopped cilantro. Remove from heat.
Lightly spray your 8x8 casserole dish with nonstick cooking spray. Place some of the vegetable mixture in the bottom of the dish, and top with four of the tortillas (3 is actually sufficient for each layer, IMHO). Top with about 2/3 or the remaining vegetable mixture and half of the shredded cheese. Add another layer of tortillas and the remaining vegetable mixture and cheese.
Bake for about 20 minutes, or until hot and bubbly.

OMG that recipe looks so good! Do you think it would still be tasty without the bell pepper? It's one of the few foods that I just won't eat. (Gag!)
The carbs are a bit on the high side for me (I need to stick to 45g or below), but since you said the servings are large, I could just have a smaller serve and a side salad or something.
I'm sure it would be fine without the bell pepper. You could probably even add in another squash instead. In 8x8 pan, 4 servings is ginormous. I often make it 8 servings. And, if you take out 2 of the tortillas that will help with the carbs too. 8 tortillas makes it pretty 'sturdy' (more lasagna like), 6 tortillas makes it a bit runnier (more casserole-ish), but I like it a little better.
