Recipe Sunday!

Monkey Bread - really quick and easy for a Sunday brunch

1/4 cup margarine or butter

1/4 cup brown sugar

2 tsp water

1/2 tsp cinnamon

1 7.5 oz can refrigerated biscuits

 

In a round 8'' glass dish, combine butter, brown sugar, water, and cinnamon

Microwave for 1 1/2 minutes or until melted

Cut each biscuit into quarters and add to dish; cover each piece with melted stuff

Push biscuits away from center and place custard cup facing up in center forming a ring

Cook in microwave on high for 4 minutes

  • Baked Chop Suey

    1 pound ground beef (I use ground turkey and it works just as well)

    1 can cream of mushroom soup

    1 can cream of chicken or celery soup (I use the celery)

    1 ? cup water

    1 cup chopped celery

    1 cup chopped onion

    1 cup uncooked minute rice

    4 tablespoons soy sauce

    1 can bean sprouts (drained) 16 oz

     

    Brown ground beef and onion.  Pour off fat.  Combine all in a greased casserole dish.

    Bake at 350 degrees for 1 ? hours

  • I have a long recipe for you ladies, but it is one of H and my's favorites! It is the only way I can get him to eat butternut squash. Shazzie - easily replace the penne with GF and it's still delish!

    3/4  teaspoon  salt, divided1/2  teaspoon  dried rosemary1/4  teaspoon  freshly ground black pepper3  cups  (1-inch) cubed peeled butternut squashCooking spray6  sweet hickory-smoked bacon slices (raw)1  cup  thinly sliced shallots8  ounces  uncooked mini penne (tube-shaped pasta)1/4  cup  all-purpose flour2  cups  2% reduced-fat milk3/4  cup  (3 ounces) shredded sharp provolone cheese1/3  cup  (1 1/2 ounces) grated fresh Parmesan cheesePreheat oven to 425?.Combine 1/4 teaspoon salt, rosemary, and pepper. Place squash on a foil-lined baking sheet coated with cooking spray; sprinkle with salt mixture. Bake at 425? for 45 minutes or until tender and lightly browned. Increase oven temperature to 450?.Cook the bacon in a large nonstick skillet over medium heat until crisp. Remove bacon from pan, reserving 1 1/2 teaspoons drippings in pan; crumble bacon. Increase heat to medium-high. Add shallots to pan; saut? 8 minutes or until tender. Combine squash mixture, bacon, and shallots; set aside.Cook pasta according to the package directions, omitting salt and fat. Drain well.Combine flour and 1/2 teaspoon salt in a Dutch oven over medium-high heat. Gradually add milk, stirring constantly with a whisk; bring to a boil. Cook 1 minute or until slightly thick, stirring constantly. Remove from heat. Add provolone, stirring until cheese melts. Add pasta to cheese mixture, tossing well to combine. Spoon pasta mixture into an 11 x 7-inch baking dish lightly coated with cooking spray; top with squash mixture. Sprinkle evenly with Parmesan cheese. Bake at 450? for 10 minutes or until cheese melts and begins to brown.

     

  • and I LOVE monkey bread! I make a recipe that has blueberries in it (I try to make it a little healthier, lol)
  • Popcorn cauliflower...

    1 tsp salt
    2 tsp sugar
    1/4 tsp onion powder
    1/4 tsp garlic powder
    1/2 tsp paprika
    1/2 tsp tumeric
    8 tsp olive oil
    Mix everything together, brush over cut up pieces of cauliflower that have been placed on a cookie sheet and bake at 450 degrees for 30-35 minutes, o...r until you can easily pierce with a fork. Double everything for 2 heads of cauliflower. Enjoy!  FYI- The tumeric will turn everything yellow so be careful..I recently got this recipe from a friend and it is delicious and healthy !

  • As always, fashionably late to the party. 

    Last night we needed something quick, so we did a chicken stir fry that was super easy and tasty.

    Chicken tenderloin strips, cut into thirds.

    Red bell pepper, chopped

    Orange bell pepper, chopped

    1 cup of rice

    soy sauce 

    olive oil spray 

    salt

    lemonpepper (we use trader joe's in the grinder)

    garlic powder

    paprika

    Prepare rice (we just use our rice cooker, any rice works for this). Spray a large cooking pan with olive oil spray. Over medium high heat season chicken with salt and lemon pepper and cook halfway. Add bell pepper to pan, season with a bit more salt and lemon pepper, add a couple dashes of garlic powder to taste (I love garlic so I always add more than most people would like). Give the pan a good roundabout with the soy sauce, probably twice around will be enough. Mix well. When chicken is cooked through and peppers are soft, sprinkle with paprika, give one last good mix, and serve hot over rice.

     

    I apologize for my lack of measurements, I rarely use measurements on off the cuff dinners like this. Most of the seasonings are just to taste, so use as little or as much as you like!
