Recipe Sunday

... on Monday.  I was sick yesterday and didn't get much done :(

Anyway, I present: Mac Casserole.  My mother has been making it for decades and now it's one of DH's favorites.  So easy too!  When we were kids it would serve four with leftovers.  But now if DH is eating it, more like three.

2 cups elbow mac, cooked

1 14oz jar sauce (I use Ragu)

8 oz shredded cheddar cheese 

2 tblsp butter

1/2 cup breadcrumbs (Mom likes plain, I use Italian)

 

1.  Spray dish (2 qt casserole, or whatever you've got) with Pam

2.  Layer 1/2 mac, 1/2 sauce, 1/2 cheese.  Repeat.

3.  Melt butter and stir in breadcrumbs.  Spread on top of casserole

4.  Bake at 325 for  25 min, uncovered.

    Sixth Anniversary Combo Breaker

    Panda, I feel you!  I've been sick for what seems like FOREVER.  And thanks for that recipe!  I love easy, delicious ones with very few ingredients - I'm usually so dead tired after work that I need something low-maintenance to throw together.

    Mine is another All Recipes one (is that cheating?  I don't really have any family secret recipes I can share!) - it's my tried and true cupcake!  SOOO good.

    Self-filled Cupcakes

    1 (8 oz) pkg cream cheese, softened (I use the one with 1/3 less fat and it works well!)
    1/2 cup white sugar
    1 egg
    1 cup semisweet chocolate chips (I've used the mini ones before and they work great)
    1 (18.25 oz) pkg chocolate cake mix AND ALL INGREDIENTS NEEDED TO COMPLETE IT (that was missing from the original recipe and I almost forgot to get eggs because of it!  Usually you need an egg or two and some vegetable oil.  I swear by devil's food cake mix.)

    1. Preheat the oven to 350 degrees F (175 degrees C), or to the temperature recommended on the cake mix package.

    2. Prepare chocolate cake mix according to package directions, but do not bake. In separate bowl cream together cream cheese and sugar until smooth. Beat in the egg until well blended, then stir in chocolate chips.

    3. Line cupcake tins with cupcake papers. Fill 2/3 full with chocolate cake batter. Add 1 teaspoon cream cheese mixture to the center, and top with more cake batter.

    4. Bake according to package directions for cupcakes. Cool and frost with cream cheese frosting (recipe below).

     

    Cream Cheese Frosting

    2 (8 oz) pkgs cream cheese, softened (again, reduced fat works well)
    1/2 cup butter, softened
    2 cups sifted confectioners' sugar
    1 teaspoon vanilla extract

    In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar. Store in the refrigerator after use. 

    I use a frosting tip with a freezer bag (acting as an icing bag) to frost my cupcakes - they end up looking a lot fancier that way!

  • Low-Maintenance Crock Pot Chicken

    1 whole chicken

    1/8c dry white wine

    1/2 lemon, juiced

    2 tbsp butter

    1 onion, quartered

    3 cloves of garlic, sliced

    Salt, pepper, rosemary & thyme to taste

    Place chicken in crock pot (after removing any "inner things"). Pour white wine and lemon juice over chicken. Place onions around the edge of the chicken, and garlic on top of and inside chicken. Season with your mixture of spices. Cut butter into chunks and place chunks all over top of chicken.

    Cover and cook on low for 6 hours. Be prepared for tasty goodness. 

  • Those cupcakes sound amazing!  And it's not cheating if you've tried the recipe before.  

    And now I wish I had a slow cooker!

  • I know I know!  I'm not buying one here though, I'll wait til we get to the states.  DH has one from his college years but I think it's small.  Not sure.

  • Here's something addictive.

    Pizza dip

    2 - 8oz cream cheese, cubed

    1 - can (14oz) pizza sauce

    1 can (3.8oz, or similar) black olives, chopped

    1 pkg (8oz) sliced pepperoni, chopped

    2 cups shredded mozzerela (pizza kind)

     

    Mix all together and either melt it in the microwave or in the slow cooker.

    Serve with tortilla chips, bagel chips or crackers.
