Potluck - what do you typically bring?
We are having a pot luck at work and I am trying to come up with something to bring. I have taken crack dip in the past and it was a hit, but I wanted to try something different. I will not have access to a stove once at work, but could plug in a slow cooker or heat something in the microwave if needed.
It does not need to be something hot though, cold, app, side dish, dessert, anything like that would work.

It's best warm. Is there a microwave there? Anyways, anytime I make this, I serve with Icecream if possible and its always a hit.
I've brought this cake (it's actually kind of like a trifle) to a couple of potlucks. It needs to be refrigerated. Quick & easy, tasty, and it serves a bunch of people.
Directions:
To prepare, mix up a chocolate cake mix from a box, and bake it in two round cake pans. Let the cakes cool. Make a batch of instant chocolate pudding. Crush up several Heath bars.
In a large bowl, place one of the cooled round cakes. Spread half of the chocolate pudding on top, followed by half a container of Cool Whip. Sprinkle half of the Heath bar on top. Repeat the layers.
I made these for the Super Bowl this year & they were great!
Chicken Enchilada Roll Ups
Ingredients:
1-2 chicken breasts, shredded
1 8-oz. packages cream cheese, softened (I used Neufchatel cheese)
1 1/3 cup shredded Mexican blend cheese
1 teaspoon garlic, finely minced
1 ? tablespoons chili powder
1 teaspoon cumin
salt to taste
1/2 bunch cilantro, chopped
4 green onions, chopped
10-oz. can Rotel tomatoes
4-5 10? tortillas
Directions:
-Mix cheeses together until well blended.
-Add all remaining ingredients and mix well.
-Cover and refrigerate for at least one hour.
-Place one heaping spoonful onto tortilla.
-Spread to edges using a metal spatula.
-Roll and cut into slices. You will get approximately 8-10 roll ups out of each wrap.
i usually take a cold dish, something with fruit or veggies. because it seems like that's a group that's always lacking in potlucks. this sald is always a big hit.
