  • I really like this Salmon with Green Beans & Lemon Zest from Everyday Food.  Salmon can be a little pricey, but it's better to pay $8 for a piece that feeds both of us than to pay $18 each to eat it in a restaurant.  And, you can always watch for sales.

  • Relatively so.

    Pasta (I mixed ww and regular--though earth fare ww is AWESOME!) with artichoke hearts (from a can), red peppers (from a jar), maybe some cheese (fresh mozz if i have any) and I just put the non-creamy kind of Italian dressing on it. 

    I warm the artichokes and peppers on low as the pasta water boils and it's done at about the same time.  I'll have it for lunch when I run out of lettuce and there's no more room in the grocery budget.  (I almost always keep artichoke hearts and roasted red pepers in the house)

  • Stir fry! Saute a yellow squash, a zucchini, an onion and any other veggies you have lying around in a little olive oil. Heat some frozen chicken strips (or tofu if you are me), mix in some stir fry or soy sauce and serve over rice. Takes about 30 minutes including prep time and tastes delish!

  • By the far the meal that I cook, which fits into all three, is my turkey burgers. I do not eat red meat or pork, so I have had to learn to do things with turkey, it makes my husband happy, as well as myself! Turkey meat is so much more healthier, and is so tasty. It is cheap. And most importantly, so very easy. I like to saute some green pepper and onions, and put it in the mix with some salt, pepper, and spices, but you do not have to do that. I like those flavors, but turkey absorbs anything. No matter what, it will turn out well. Good luck!!

    We get the Jenni-Lo turkey burgers "Lean" (93/7) from Target, and they are delish. I rub each side with a bit of Mrs. Dash and then grill them on the George Foreman grill. I add a slice of provolone cheese and serve on whole wheat buns with sliced tomato, pickles, mustard, ketchup, and a teeny tiny bit of mayo. YUM.

  • Chicken Caesar salad, with homemade Caesar dressing (it's more of a "traditional" Caesar dressing rather than creamy)
