Making a cherry vanilla cake

My SIL asked for a cherry and vanilla cake for her birthday.  I made a cherry and vanilla checkerboard.  I am not telling anyone I am going to make it a surprise when she cuts into the cake.  I am just trying to figure out how to decorate it. I am thinking cherry icing all over with vanilla icing in the centre at the top and a bunch of cerries in the vanilla icing.  Any other ideas?

  • Since a cherry vanilla cake tends to be quite sweet, why not use cream cheese icing? You could flavour it with extra vanilla and then maybe add cherries to it for the filling.

  • I agree, a great sis! I would use a whipped cream icing, something a bit on the lighter side.

    I hear ya about being the go to peron for cakes, etc. I kinda became that for the nephews b-day parties...it's getting harder and harder to outdo myself.

  • I made a vanilla cake recently and used fresh whipped cream to "ice" it.  It was delicious and not too sweet.  I used good vanilla, a touch of sugar and about 1/3 cup of cherry juice from the defrosted cherries I used to put on the side.  Yummers.
