Is it ok to freeze cheese?

Does anyone know if it's ok to freeze cheese? DH and I eat a lot of cheese throughout the week, and I feel like I'm constantly buying it. I'm talking just the pre-shredded Mexican blend, of just straight Mozzarella.

I am always tempted to buy the big huge bag of it at Sam's, but I don't think we'll eat it all before it starts to get moldy. So... I'm wondering if I can separate it into smaller bags, and freeze it.

  • I've done it before with both shredded and sliced cheeses. Just be sure you seal it up well and get as much air as possible out to prevent freezer burn.

    Or if you buy a bag & end up opening it, freeze it & then thaw it & it has a bit of freezer burn, just toss a papertowel in there to prevent the water from making your cheese all slimey--does that make sense??

  • I've froze cheese before but I don't like how "crumbly" it is after it's been frozen....that's just me though.

  • I freeze shredded cheese all the time, but when I use it, it is always in something I bake, never for fresh salads or something similar.

  • All the cheese we have at home is frozen (in bags), except sliced cheese.

    This saves lots of money, because I buy it in blocks in Costco, and shred it at home.

    I was actually thinking about doing this, so I will look into that when I go this weekend!

  • We buy the giant blocks of it at Costco and freeze it. It works really well.
