Oven Fried Chicken

I read this recipe and didn't think it would work, but sure enough, tastes like fried chicken!  Only it's not deep fried, so it's not as bad for you.

Prep 10 Min, Bake 1 hr

1/4 cup butter or margarine

1/2 cup flour

1 tsp parika

1/2 tsp salt

1/4 tsp pepper

3-3.5 lb cut up whole chicken (I used skinless boneless chicken breasts which makes it lighter)

1.  Heat oven to 425  Melt butter in 13x9 pan in oven while you prep chicken

2. In shallow dish mix flour, paprika, salt and pepper.  Coat chicken in mixture and place in pan skin side down (if your chicken has skin on it).

3.  Bake uncovered 30 min.  Turn chicken over and bake 30 min more or until juice is clear, 170 deg for breasts, 180 deg for thighs/legs.

Re: Oven Fried Chicken

    • DRY RUB CHICKEN WINGS 
    • 1 pound of chicken wings
    • 1 teaspoon paprika
    • 2-3 dried chipotle peppers.  This is where the heat is going to come from so if you are a wimp use 2 or put 3 in and build up that heat tolerance.
    • 1/2 teaspoon kosher salt
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon ground coriander
    • 1/2 teaspoon ground cumin
    • Pinch of black pepper
    • 4 TB of unsalted butter melted

    Combine the dry ingredients, taste, and adjust.

    Pat the wings dry, brush on the unsalted butter, and then sprinkle the rub over to coat. Bake at 350 degrees for 40-45 minutes or until wings are done. you can also grill them over a medium flame.
