Is it ok to freeze cheese?
Does anyone know if it's ok to freeze cheese? DH and I eat a lot of cheese throughout the week, and I feel like I'm constantly buying it. I'm talking just the pre-shredded Mexican blend, of just straight Mozzarella.
I am always tempted to buy the big huge bag of it at Sam's, but I don't think we'll eat it all before it starts to get moldy. So... I'm wondering if I can separate it into smaller bags, and freeze it.

Or if you buy a bag & end up opening it, freeze it & then thaw it & it has a bit of freezer burn, just toss a papertowel in there to prevent the water from making your cheese all slimey--does that make sense??
I freeze shredded cheese all the time, but when I use it, it is always in something I bake, never for fresh salads or something similar.
All the cheese we have at home is frozen (in bags), except sliced cheese.
This saves lots of money, because I buy it in blocks in Costco, and shred it at home.

I was actually thinking about doing this, so I will look into that when I go this weekend!
