To my Jewish Nesties!! Passover on it's way!
I moved into my new house not 3 weeks ago, and my family has decided my place will be the place for Passover! I already have 20 people coming, and not a clue what to cook. Anyone have some good recipes for Passover meals?? This will be my first time hosting my very own seder, and I really would like to impress!!!

However, that being said, if I were hosting my very own seder in a new house, for 20 people, I would go pretty simple with the menu so as not to overstress myself.
I'd do:
Course 1: Chopped liver, gefilte fish, and matzah ball soup. (I can't have Passover without chopped liver, but you can drop it if you're not a fan...)
Main Course:
*Either a nice brisket or roast chicken - let your oven do the work for you. Either way, you can roast some veggies and potatoes right along side which keeps things easy for you.
*Saffron Quinoa with leeks and asparagus. I love quinoa as a Passover food since it reminds me of couscous BUT is a seed and therefore kashrut. Easy to make - just rinse and cook in chicken stock/broth and add some saffron to the liquid. Sautee some leeks and asparagus in butter and toss them in at the end.
*Potato Kugel
*Green seasonal salad
Dessert:
* Flourless chocolate cake, almond horns....I tend to stay away from the boxed mix desserts because they all taste like sand to me. Better to stick with regular recipes that happen to be kosher.
Mazel tov....
My favorite is an apricot square recipe made with matzo meal and crushed walnuts (so yummy).
You also might want to repost on the Jewish Wedding Board (we've been using it as a "Catch all" for Jewish knotties, nesties and bumpies.
