Hi girls! I did not see another thread for this so i guess i will start. here is my recipe for this weeks exchange for those that are interested :)

Ambrosia Salad

1 can crushed pineapple (do not drain)

1 lg can mandarin oranges (do not drain)

1 packet pistachio flavor  jello instant pudding

1 cup mini marshmellows

1/2 cup chredded coconut

1 8 oz tub of cool whip, defrosted

mix everything together in bowl, chill for an hour. serve!

yum!

  • Ah, my mom loves that stuff!  Here's mine for the week:

    Chicken Tetrazzini(I modified this recipe from Betty Crocker)1 package Angel Hair pasta, broken in half1/4 cup margarine1/4 cup flour1/2 tsp salt1/4 tsp pepper1 cup chicken broth1 cup milk2 tablespoons water2 cups cubed, cooked chicken1 jar/can (4.5 oz or so) sliced mushrooms, drained1/2 to 3/4 cups grated Parmesan cheeseCook and drain pastaIn large saucepan, melt butter over low heat.  Stir in flour, salt and pepper.  Cook while stirring until it?s smooth and bubbly.Remove from heat, stir in broth and milk.  Reheat to boiling stirring constantly.Remove from heat.  Stir in pasta, water, chicken and mushrooms.Pour mixture into 2 quart casserole and sprinkle with the cheese.Bake at 350 for 30-ish minutes.

    I'm a terrible cook, but I am pretty good at baking. This week I modified a recipe from http://www.allrecipes.com to make yummy banana bread. Hope you enjoy it!

     

    Ingredients1/4 cup margarine1/4 cup applesauce1/2 cup white sugar1/2 cup brown sugar2 eggs3-4 overripe mashed bananas2 cups all-purpose flour1/2 teaspoon baking soda1/2 teaspoon baking powderdash of cinnamondash of vanilla extractdash of nutmeg1/2 cup chocolate chips DirectionsPreheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.Cream margarine, sugar, applesauce, and vanilla extract until smooth.Beat in eggs, then bananas.Add flour,  soda, powder, cinnamon, nutmeg, and chocolate chips, stirring just until combined.Pour into prepared pan and bake at 350 degrees F (175 degrees C) for about 1 hour (or till toothpick comes out clean). Remove from pan and let cool, store in refrigerator or freeze.

  • Mmmmm I love chicken tetrazzini!

    Pan roasted acorn squash

    Cut an acorn squash in half from top to bottom and clean out the seeds and fibers. Take each half and lay it cut-side down on a cutting board. Slice each half into 6 half-moon shaped pieces. Place in a skillet on medium-high with water (eyeball the amount of water, when it evaporates, add more). Cover with a lid and steam for approximately 15 minutes. 

    Drain off any remaining water, add 1/2 to 1 TBSP butter (depending on how much you like) and 2 TBSP brown sugar. Sprinkle with cinnamon. Reduce heat to low and cover. This will turn into a glaze.

     Serves 4. 

  • I have a dessert recipe cause I love me some dessert!

    • 4 tart green apples
    • 1/2 cup brown sugar
    • 4 tablespoons butter
    • 2 teaspoons ground cinnamon
    1. Preheat oven to 350 degrees F (175 degrees C).
    2. Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Mix the sugar and cinnamon together with two parts water. This is a glaze you drizzle into the middle of the apples. Add the butter and rest of the glaze.
    3. Bake in preheated oven for 15 minutes, until sugar begins to caramelize and apples are tender.
