I cheated with the rice & edamame since I used the frozen stuff you can zap in the microwave.
Ginger-Lemon-Soy Glaze/Marinade:
- 1/3 cup soy sauce
- 2/3 cup water*
- 2 Tbs. brown sugar
- Zest & juice of 1 medium sized lemon
- 2 Tbs. freshly grated ginger
* The recipe I originally looked at called for 1 cup thin soy sauce. I only had regular soy sauce so I used the above ratio to avoid it being overly salty.
Honestly, I probably could have halved the recipe for just the two of
us, but it would be a good amount of glaze for 4 steaks. I split the glaze, using most to marinate the tuna for about 30 min and then poured the rest over the tuna in the pan just as the it was almost done. It was great over the rice.
