Dinner help....

Since moving into our new house and having my brother move in, we have implimented Date Night Tuesdays.  It isn't technically date night because its friends but we couldnt think of a better name.  Anyway, every tuesday one of the friends buys the grocerys, another cooks, another cleans and everyone eats.  So far so good.  We listen to music, we drink wine, its really fun.  Last night Coy mentioned how much he enjoyed it and how fun it was since we all kinda get to try other peoples cooking styles and everyone wins.  Anyway, it is back to my turn again and I am having a hard time deciding what I want to cook. 

Anything in mind that I should try for next week?  I was thinking of a few PW recipes but I have done them before.  It's only 4 of us and the budget doesnt really matter.

  • I have a lot of ideas but what are you looking at as a main ingredient?  chicken, seafood, beef?

    And J and I call this rich people chicken because it's so good - Lemon and Herb Roasted Crockpot Roasted Chicken.
  • I made Shepherd's Pie a couple weeks ago:

    Easy Shepherd?s Pie

    1 lb. ground beef

    2 c. hot mashed potatoes

    4 oz. cream cheese, cubed.

    1 c. shredded cheddar cheese

    2 cloves garlic, minced

    4 c. frozen mixed vegetables, thawed

    1 c. beef  gravy (can use 2 if you?d like)

    Preheat oven to 375. Brown ground beef, drain.  Mix potatoes, cream cheese, ? c. cheese  and garlic until well blended.  Stir vegetables and gravy into meat.  Spoon into 9 inch square baking dish.  Cover with mashed potato mixture.  Don?t worry about it being perfectly even.  Sprinkle with remaining shredded cheese.  Bake 20 minutes or until heated through.

  • And since strawberries are in season now, this is one of my most favorite strawberry recipes.  Can be eaten for breakfast or dessert. 

    Strawberry Bread

    1 ? c. flour ( I use self rising, if you use all purpose you'll have to add the salt, etc.)

    1 c. sugar

    1 ? tsp. cinnamon

    2 eggs beaten

    ? c. oil

    1 c. fresh strawberries or frozen ones drained.

    Mix together flour, sugar & cinnamon.  Combine eggs, oil & strawberries.  Add to dry ingredients. Pour into a greased & floured 9 x 5 inch loaf pan.  Bake 50-60 minutes in 350 degree oven.  Serve with Strawberry Butter (Recipe follows)

    Strawberry Butter

    1 10 oz. pkg. frozen strawberries. (can use fresh)

    1 c. soft butter

    1 c. sifted powdered sugar.

    Combine ingredients in blender.

    It's divine.  If you're going to make it, do yourself a favor and make 2 loaves- it's that good.  (The butter makes enough for 2 loaves)
