hi girls! i'll start the thread for recipes this week. one of the other girls (im sorry i cant remember who
) wanted crock pot recipes so here goes....
blood mary pot roast with fall vegetables
2 tbsp evoo
1 3-4 lb roast
1/2 cup low sodium beef broth
1 12 oz. bottle of v-8
1 tbsp prepared horseradish
1/4 tsp celery seed
1 bay leaf
2 leeks, sliced 3 ribs celery, sliced into 2 i pieces
1/2 green bell pepper, chopped
1/4 cup cold water
1/4 cup flour
2 tbsp chopped parsley
2 tbsp vodka
1 tsp red wine vinegar
hot pepper sauce, kosher salt and pepper to taste
heat oil in saute pan. brown roast on all sides over medium high heat (about 12 min total) remove roast from pana nd place in 5-6 qt slow cooker. deglaze pan with broth, scraping up brown bits. stir in v-8, horseradish, celery seed & bay leaf. pour mixture into slow cooker. arrange leeks, celery and bell pepper on top of meat. cover slower cooker, cook until meat and veggies are tender. 4-5 hrs on high or 9-10 hrs on low.
using a slotted spoon, remove meat and veggies to serving platter. cover to keep warm. transfer juices from slow cooker to sauce pan. skim off fat. stir cold water into flour. stir flour mixture into juices in suacepan and cook over medium heat until gravy is thickened. about 2 min. stir parsley, vodka and vinegar into gravy in saucepan. season gravy with hot pepper sauce, salt and black pepper. serve gravy over pot roast and veggies.

sorry, typo the celery is sliced into 2 inch pieces.
