Hmmmm, I'm simple with my sweet salads.
Strawberry Spinach Salad
Bag of spinach or argula or mixed greens or a variety of it all
8oz container of strawberries, cleaned, hulled and quartered
1/2 cup walnuts or candied walnuts, chopped
1/2 cup feta/gorgonzola/blue/goat- crumbled *Depending on what you like, goat would be best*
Dressing:
4 Tbs. balsamic vinegar
1 Tbs. Dijon mustard
2 tsp. light brown sugar
2 tsp. poppy seeds
1/2 cup extra virgin olive oil
Salt & pepper to taste
1. Assemble the salad.
2. Make dressing - In a small bowl, mix together the first 6 ingredients of the dressing. Slowly add the olive oil, while whisking vigorously to create an emulsion. Season with salt and pepper to taste.
**adding bacon to this would be soooooooo perfect, too.***
