Easter Brunch

Ok ladies, I'm hosting brunch.  Aside from my FIL telling me how much he doesn't like lemon cake and how he won't have any, I'm still excited about hosting.  After much deliberation this is my final menu....

  • Bacon and Spinach Quiche (homemade, Paula Deen Recipe)
  • Warm Croissants
  • Fresh Fruit (Pineapple, Strawberries, blueberries, cantalope)
  • Lemon Pound Cake with Raspberry Coulis and fresh whipped cream
  • Strawberry Bellinis, Mimosas
  • Coffee
  • Orange Juice

It's a small group.  Six of us.  Would you attend this if you were invited?  I guess I'm kind of sensitive about how my FIL insulted what I was making.  I'm usually not this needy but with this being the first holiday without my mom here (my parents moved to NC in November) I'm just trying to make something special.

  • The menu sounds wonderful :)  To your FIL, He doesn't have to eat it if he doesn't want to! Don't let him ruin your day- it sounds like a wonderful thing you're doing, so feel good about it and enjoy being a hostess :)

  • It looks fabulous!  Are you making the lemon pound cake?  If so, can you post the recipe?  I LOVE lemon!! 

    As far as FIL goes...you can't please all the people all the time and shame on him for saying anything!  Don't let him ruin your day!

  • I'm trying not to waste too much time worrying about FIL.  The funny part is that he likes me!  I can only imagine what he'd say if he didn't!  The recipe I'm using is a basic pound cake recipe that was shared with me from fellow nestie dthetford.  I'm just skipping the vanilla extract and adding lemon juice and zest. http://smittenkitchen.com/2009/03/cream-cheese-pound-cake-strawberry-coulis/

  • Sounds awesome! I was just reading the Cooking Light magazine and they showcased an Easter dinner spread but I have to say I like yours more than the magazines ;)
  • Awwww thanks everyone!  I'm happy with what I'm serving.  My husband is happy with it too.  I'm getting more excited.  I decided on my table settings and my colors are pink and yellow.
