Dinner, suggestions please
So we're hitting that dinner rut again. it's sucky, we did so good until DH started this evening job. Now I'm not motivated to cook a full blown meal to eat alone. We did a one dish thing tonight, we call it chicken and green rice, super easy, one dish in the oven, one hour, it's done.
Any one dish or crockpot ideas? especially ones I can prepare in advance, like on my day off. I'm running out of energy here and it's super important for me to eat good food, especially with BF and LO #2 on the way! Share, please!!

I cooked up a ton of stuff in the crockpot recently, half to eat and half to freeze for our post-baby dinners.
I made split pea soup, black bean and lentil soup, spaghetti sauce, chili, tangy pork roast, and mushroom pot roast. All of that freezes well and definitely keeps for a few days.
When I'm in a rut, I look on Allrecipes.com. I usually search by the type of meat (or ingredients) I have or that I see on sale for the week. Love the user reviews and tips. GL!
This is one of our faves too. Cook that all day on low and omg, that meat just falls apart! Hubby likes this one with some wild rice.
There are these bag meals I like. That's the best way I can describe it. These bag/seasonings are in the season packaging area. Like where you would get the Taco seasoning packet. They have a chicken and pork one. The chicken one is my favorite. You just sprinkle the seasoning on the chicken and throw it into the bag. Same kind of concept with the pork. Such a fast dinner. I throw veggies and red potatoes into the bag as well!! YUMMY
I also like cooking freezer-friendly soups in the crockpot. I make really simple ones like chorizo, kale and veggies; pureed carrot; chicken, quinoa, veggies; lentil curry-ish soup, etc.
I'll also make chicken stock using a bone-in, skin-on chicken on a Sunday, shredding the chicken to use in soups, salads, and use the stock for a soup (like one of the ones above). Cooked, shredded chicken freezes well!
I also make a lazy caesar dressing using good quality mayo and lemon juice to make (gluten-free) chicken salad sandwiches or pasta salad.
Frittatas are easy too! If I have spinach, tomatoes, cooked potatoes leftover, I just cook it in a skillet.
My blog doesn't have the quickest of dinner ideas, but if you've got a day off, they are do-able in a few hours. GL!
http://chikarakobu.blogspot.com/I love making pasta bake because it's so easy and makes fab leftovers, but I suppose that technically that's a two dish meal (since you have to pre-cook the pasta). This chicken enchilada casserole wasn't bad - I made a few changes to the recipe though...can't remember what they were off the top of my head, I think mostly spices and stuff.
Otherwise I like easy crockpot stuff like chili - I don't make a fancy version, just ground beef, and canned diced tomatoes and canned beans plus some tomato paste, beef stock and spices, but it's good comfort food.
I recently made this lamb stew in the crockpot as well, and it turned out really good (I'm not a huge fan of lamb, but we had some that we needed to use to clear out the freezer)! This vegetarian bean curry is quite yummy with some naan on the side, too, and easy to make in the crockpot.
I've also been meaning to try this super basic slow cooker chicken & dumpling recipe and this slow cooker beef stroganoff (can you tell I like my crockpot lol?).
Dinner time rut is VERY common for us. We try to make it to Friday without eating out - and hopefully eating healthy. By Thursday it's very hard. One thing that we do that's easy and somewhat healthy is make Pizza Salad. Ingredients below:
Lettuce (we used the bag salad), green pepper (chopped up), olives (chopped up), onion (chopped up), tomatos (chopped up), turkey pepperoni and shredded mozzerrella (sp?).
Mix all of those and for a dressing - if you want one - you can use Italian but we use a tomato/spaghetti sauce. Makes enough for four so if it's just two of you, you can definitely use the rest for lunch the next day.

Thanks for the ideas! I generally work 12 hour shifts so coming home and COOKING dinner at 8pm after BF (which is usually 830-9) is out of the question! Can't wait to see what I come up with!
