Hawki--recipe help

I'm baking DH a birthday cake tonight and would like a fail-proof icing recipe.  I'm making Ina Garten's coconut cake, and I've made it before but I have never had good luck with the accompanying icing.

Do you have a fail-proof buttercream recipe?

  • i am completely butting in here (sorry!), but i've always had success with this buttercream recipe, super easy and soo yummy:

  • 1 stick unsalted butter at room temperature (cut it into little pieces if you need it to come to temp faster)

    approx 1 pound of powdered sugar

    1 tsp vanilla extract (replace it with coconut extract if you want since its a coconut cake)

    3-4 T milk (depending on the consistency you want -- to frost the cake you want to be able to scoop a spatula full of icing up and turn it over without it falling off until you shake the spatula) 

    Cream the butter and extract first for about 2-3 minutes until its really smooth, then add the powdered sugar a cup at a time on low and then add the milk a tablespoon at a time until you hit the right consistency.

     I think part of the problem is that Ina Garten's recipe starts with a pound of butter.  Four sticks of butter in one pot of frosting!?!?!?!  Ridiculous.

  • Do you need enough to fill the cake too?  If so you should probably double my recipe. 

    ETA: But I've tried Ina's buttercream recipe and wasn't a fan -- it just tastes like butter in my opinion.

    Yeah, it's a 9 inch round cake with the frosting in the middle.  I think I'll double it and then be prepared to make more if necessary.
