Menu...sorry for the late post

I have been recovering from a nasty stomach bug the past few days. I am all out of sorts, and didn't get an April menu done yet (tsk tsk, I know lol). This week we're cleaning out the pantry/freezer. This is the loose plan:

Monday: Hamburger Helper

Tuesday: Basa fish with random frozen veg

Wednesday: Pork chops w/ mashed potatos

Thursday: Spaghetti & sauce

Friday: ...whatever's left! lol

  • It's good...here's the base recipe but I sorta change it up depending on what I have at home...i.e. I'll throw real orange slices in or mandarin oranges or sometimes orange juice. Same with tomatoes. I tend to prefer "fresh" ingredients. Also I'm not a garlic fan so I'll usually just sprinkle a bit of garlic powder in and that's it. Then I'll add other spices like fresh ground pepper or basil, etc. 

    4 chicken breasts
    1 tbsp olive oil
    0.5 sweet onion, diced
    0.5 clove garlic, minced
    1 can plum or diced tomatoes
    2 tbsp orange marmalade
    4 tbsp balsamic vinegar (I usually use Renee's Balsamic vinaigrette)

    1.) Bake chicken breasts as you normally would.
    2.) Meanwhile, heat oil in skillet over med-high heat. Add onion and garlic and cook 1 min. Add tomatoes. Stir in marmalade and vinegar.
    3.) Serve over chicken.
